Handpicked grapes between end of October and beginning of November traditional maceration over skins for 10 days in small steel containers at controlled temperature, refinement in steel and then in bottles for 4 months. Organoleptic characteristics.

Fresh, dry and well balanced, easy.

PAIRINGS: Huge versaltily and easy to combine perfect with simple pasta dishes goes well with complex food.

Carbone Winery

 

The Carbone winery sits on top of symbolic site for the area, just above the first historical furnace of the Vulture volcano compound: Toppo San Paolo, in Braide.

That’s the place where grapes become wine. No frills in the winery: stainless steel containers of different capacities, with the possibility to manage temperatures whenever needed, some pumps, a pneumatic grape presser, and a small bottling machine.

Everything happens under a wooden roof, to facilitate thermic insulation, while surrounded by vineyards, wheat fields, Kites, Buzzards, Kestrels.
