The tomatoes used to produce this puree are grown in dry farming, on the ground and in the open field, in the sunny hills of the Palermo hinterland. Once they have reached optimal ripeness, they are harvested by hand in boxes, in several passes, from July to October. They are then processed without adding any other ingredients.
