SABA GRAPE MUST
Local grape must from organic agricolture (lambrusco, ancellotta, malbo gentile, salamino, marani) cooked over direct heat and reduced by evaporation up to 25-30% of the initial volume.
Saba is ideal for ice cream, panna cotta, yogurt, pork and, as in the past, with polenta, on the snow or diluted in fresh water as a thirst quenching tonic.
